Green Goddess Soup with Broccolini and Sunflower Seed Topping is a healthy and delicious vegetable soup that is perfect for any season as it can be served hot or cold. This soup is loaded with nutritious greens, such as spinach, kale, and peas, making it a great way to get your daily dose of vitamins and minerals. We also add our Collagen Renew elixir for an added punch of skin goodness!
Ingredients
For the soup:
• 1 tablespoon seaweed flakes (dulse or kelp)
• 1 leek
• 1 large head broccoli, chopped
• 6-8 kale leaves, removed from stems and shredded
• ½ cup fresh mixed herbs–parsley and basil work well,
sage, oregano and tarragon are also great!
• 1 can cannellini beans, drained and rinsed
• 1 litre vegetable stock
• 2 tsp Collagen Renew (to be added in bowl at time of serving)
For the garnish:
• 1 bunch broccolini
• 3 tablespoons sunflower seeds
• 1 teaspoon sesame oil
• 1 teaspoon tamari
Instructions:
1. Add all of the soup ingredients to a large saucepan. Bring to the boil. Reduce heat to low and simmer for 20-25 minutes.
2. Meanwhile slice the broccolini in half then cut it long ways to create long thin slices.
3. Heat a small frying pan over high heat, add the sesame oil, broccolini, and sunflower seeds, and stir fry for 2-3 minutes. Splash with tamari as it's cooking.
4. Stir in 2 tsp of Collagen Renew.
5. Serve soup topped with toasted seeds and broccolini and an extra splash of sesame oil.
